I have been cutting potatoes into pieces and microwaving them until soft. I add a generous amount of Lite Salt. I think that they are tasty, and it is a way of cooking potatoes without oil or fat.
The preparation time is about 10 minutes to clean the potatoes, remove any bad parts, and cut them into pieces The cook time is also about 10 minutes for two large potatoes. If you try this, check the potatoes for softness before the cooking time completes. If you overcook they will start to dry out and become a little chewy, but if that happens they are still okay to eat.
